I call these babies “coconut combo” because included in the recipe is a combination of coconut goodness: Coconut oil, coconut sugar (not a lot), and shredded coconut. Why is coconut the darling of the moment? It’s a different kind of fat that’s metabolized differently by our bodies than most other oils.
